Cucumber Salad
Kelsie's awesome cucumber salad!
Ingredients: (This is for a large batch, if you don't want it so big, just cut it in half)
6 large cucumbers, sliced thin
1 medium tomato diced
1 medium onion diced
1 Tbsp salt
Dressing:
1/2 cup cider vinegar
4 Tbsp canola oil
2 Tbsp honey
1 tsp celery salt
1 tsp dried basil
1 tsp ground mustard
1 tsp garlic powder
1/2-1 tsp salt (to taste)
1/2 tsp dried oregano
Couple dashes of cayenne pepper
Put sliced cucumbers in a strainer and toss with 1 Tbsp salt. Let stand for 30+ minutes. (This draws all the water out of the cucumbers, so either put it on a plate to catch the water or in the sink. I like it on a plate in the fridge so the cucumbers stay cold)
In a large bowl, combine diced tomatoes and onions.
In a small bowl whisk together all the dressing ingredients. When you are ready to serve, rinse the cucumbers to get all the salt off and drain. Add to tomatoes and onions. Toss with dressing.
Yum!!
This is by far one of my very favorite salads. In fact, it's a recipe I refused to share for a very long time. But now, it's time to share the love!

I absolutely do NOT like cucumbers and will not eat them, but this was so good that I had two servings. It must be using the salt to take out the moisture. Thanks again and hope to see you again at Kacean and Ryan's wedding!

ReplyDeleteYeah I agree, I've never understood the big secret thing...but anyway I digress, thanks for this recipe it looks amazing and can't wait to make it! I've always used the salt to draw out the moisture in cukes, it makes them taste better. I'm glad to have this new recipe w/summer coming on, yay for cukes!
DeleteI have family recipes that I covet as well. It's like having a favorite little unknown restaurant turn into a national chain that you can find anywhere and eat at anytime. You little hole in the wall restaurant just isn't that special anymore.

ReplyDeleteI just finished making this scrumptious cuke salad and put it in the fridge for later tonight. Of course, I tasted it first as any self-respecting cook would before serving it to her guests. I approve and give it a two thumbs up! Thanks for sharing, Kelsie!
ReplyDeleteP.S. Henry: Good point! I used a salad spinner after the final rinse and it removes 99% of the water. Love those spinners! :)
Rose, can you use the spinner on grapes, fruits and lettuce? Where would I find the spinner? Thanks
DeleteUse a spinner for any fruits/veggies. You can get them at most any store that's well-stocked with kitchen wares.

ReplyDeleteI think the resistance to giving out recipes has something to do w/ having something good to serve that can only come from your kitchen!!!!! I have never had this personal need, but I grew up in a time and in a community where there were a lot of potlucks and banquets. If you never shared your recipe, you never had to worry that someone else would bring YOUR specialty.
ReplyDeleteI totally get that.I was the same way!My sister in laws were such great cooks.I was good but not great.I had something they raved about.MY Mac an cheese.So why would I give the one thing to them I was proud of.That made me feel so good for them to say.Well we know who we want to make the Mac an chesse.I've heard of family recipes all my life.!Nothing wrong with that.It's put people in business!💞

ReplyDeleteI'm not a fan of apple cider...is there a substitute, or is that what makes the salad? Would plain old vinegar do?
ReplyDeleteI don't see Creole seasoning in the recipe but yet there are two pictures of it. Did it get left out by mistake? I use that stuff in a lot of recipes! Can't wait to make this.

ReplyDeleteAnita: I don't personally like this salad as leftovers. I like it right after I make it. After it sits overnight, the thinly sliced cucumbers to tend to get a little limp.
Laura: I'm sure you could substitute out the apple-cider vinegar and use plain old vinegar if you wanted to, the apple-cider vinegar is just a little sweeter and not so strong. It's not actually a flavor I can pick out of the dressing once all of the seasonings are mixed in, but I don't mind apple cider.
Kay: There is not creole seasoning in this particular recipe. It's just on the side bar to show what I use in other recipes that I post. It's really good, and I use it a lot too!
Great recipe... made it tonight with our garden fresh cukes & tomatoes - nothing better than home-grown!!

ReplyDeleteSwapping the canola oil for olive oil would work totally fine. I have done that a few times, it just changes the flavor a little.

ReplyDeleteThe photo looks like it has some kind of creamy dressing, either mayo, sour cream or something but the recipe doesn't call for anything that looks like the creamy white stuff in the sides of the bowl. Could you clarify please, I'd like to make this but am a little confused.
ReplyDeleteLike the recipe shows, there is nothing that makes the dressing creamy. The white on the side of the bowl is just part of the bowl. It's the glaze on the ceramic bowl that I used. Hope you enjoy the salad!
DeleteWhy salt then rinse? It's a bit like wetting a sponge then wringing it out...leaves a little behind but not too much...hope that helps. : )
ReplyDeleteReluctant to share recipes? If, like me, you are not an accomplished cook and have a limited repertoire of recipes, you want to keep them for yourself so you have something unique to share at pot lucks, get togethers, etc. hope that makes sense. : )
